April Recipe - Basil Vinaigrette
Sauces and dressings can be a game changer to help bring a simple meal to the next level. This Basil Vinaigrette from What’s Gaby Cooking has been a game changer in our kitchen over the last year. I have included 10 different uses below.

Simple Basil Vinaigrette
Ingredients
2 cups of tightly packed fresh basil (stems removed, about 4 ounces)
1/2 cup olive oil
2 tablespoons red wine vinegar
1 small shallot (about 1 - 2 tablespoons), chopped
2 cloves of garlic
1 teaspoons kosher salt
1/2 teaspoon red pepper flakes (optional)
Instructions
1. Combine all the ingredients for the basil vinaigrette in a high powered blender or food processor and blend for 60 seconds until very smooth
2. Tasty and adjust salad and red pepper as needed. Serve immediately. You can refrigerate the vinaigrette for up to 3 - 5 days in an airtight container.
Ten Uses for Basil Vinaigrette
1. Top your protein - the sauce is great on top of chicken, fish and steak
2. Add to your leafy greens as a salad dressing
3. Make a bowl with your favorite grain, protein and veggies and use vinaigrette as your sauce
4. Swap out for a pesto sauce in a pasta dish
5. Dress your vegetables
6. Put a dollop on to your sandwich or burger
7. Use as a topping for bruschetta
8. Drizzle on pizza
9. Add it to your charcuterie board as a dipping sauce
10. Swap the basil for cilantro and drizzle on your tacos
