GRAINS

There are a wide range of grains. Many people are most familiar with wheat, rice, oats and corn.  Other delicious grains include quinoa, amaranth, millet, bulgur and many more.
Selecting whole grains is important because they contain the original three parts of the grain - bran, endosperm and germ. Refined grains have been processed and the bran and germ have been removed.  This helps food stay fresh longer but fiber, minerals and vitamins are removed.

Here is a quick guide from the Sustainable Food Center's The Happy Kitchen program outlining how to cooking different types of grains.  Helpful information is also available on the Whole Grains Council including an A to Z list of different types of grains.
