March Recipe - No Bake Oat and Nut Butter Energy Balls

Oat and nut butter energy balls are the perfect snack to have on hand in the refrigerator. They have fiber, protein and healthy fats to help give you energy and keep you feeling satisfied. If you have been following along with my recipes for a while now, you know that I love to share ideas that can be personalized to your unique preferences. There is room to add the “mix-ins” of your choice to the base recipe so that it has the flavor and texture you enjoy most.




No Bake Oat and Nut Butter Energy Balls 


25 to 30 (1-inch) balls, approximately


Ingredients

BASE RECIPE INGREDIENTS:

  • 1 and 1/4 cups Rolled Oats

  • 1/2 cup Nut Butter of choice (I use almond butter)

  • 1/3 cup Honey (you can substitute maple syrup)

  • 1 teaspoon Vanilla Extract

  • 1/4 teaspoon Sea Salt

  • Mix-in of choice (see ideas noted below)

  • 1/2 -to 1 cup Shredded Unsweetened Coconut


MIX-IN IDEAS (about 1/2 to 3/4 cup total)

  • Chocolate chips (1/4 to 1/2 cup)

  • Cranberries (1/4 cup to 1/2 cup)

  • Chia Seeds (1 Tablespoon)

  • Flax Seeds (1 Tablespoon)

  • Hemp Seeds (1 Tablespoon)

  • Pumpkin Seeds (1 Tablespoon)


Instructions

  1. Place the oats in a food processor or blender and pulse until finely ground. You can skip this step if you prefer your energy ball to have more texture.

  2. Combine oats, nut butter, honey, vanilla, salt and mix-ins of choice into a bowl and stir with a spatula until thoroughly combined. If mixture is dry, add nut butter.  If mixture is too wet, add oats.  

  3. Roll the mixture into balls approximately 1 inch in diameter. 

  4. Place the shredded coconut on a separate plate and roll the balls in the coconut to completely cover.

  5. Place balls on a sheet tray and freeze for 30 minutes to set. 

  6. Remove from freezer and place into a sealed container. Store in the refrigerator for up to a week or frozen for up to 3 months.
