February Recipe - Walnut Crusted Salmon

Salmon is well known for its anti-inflammatory omega-3 fatty acids, and this simple recipe pairs the flavorful fish with another omega-3-rich food—walnuts—to create a crunchy, nourishing crust. With just a handful of pantry ingredients, this dish comes together quickly and is elegant enough for entertaining while still easy enough for a weeknight meal.

Walnut-Crusted Salmon
INGREDIENTS
4 salmon fillets (about 6 oz each)
1 cup walnuts, finely chopped or pulsed in a food processor
¼ cup panko breadcrumbs
½ tablespoon lemon zest
1 teaspoon dried Italian herbs
2 tablespoons Dijon mustard
1 tablespoon maple syrup
1 teaspoon Gaby’s Everyday Seasoning (from Dalkin & Co - Blend includes herbs, pepper, salt, garlic powder, and paprika)
INSTRUCTIONS
1. GET SET.
Preheat oven to 375°F. Line a baking sheet with parchment paper or lightly grease a nonstick baking sheet.
2. PREPARE THE CRUST.
In a small bowl, combine the walnuts, panko breadcrumbs, lemon zest, and Italian herbs. Set aside.
3. PREPARE THE SALMON.
Pat the salmon fillets dry with paper towels and season lightly with Gaby’s Everyday Seasoning. In a separate small bowl, mix the Dijon mustard and maple syrup. Using a spoon or basting brush, coat the top of each salmon fillet with an even layer of the mustard mixture.
4. ADD THE CRUST.
Spoon the walnut mixture over the mustard-coated salmon, gently pressing it onto the top and sides so it adheres.
5. COOK.
Arrange the salmon fillets on the prepared baking sheet, leaving about 1 inch between each piece. Bake for approximately 15 minutes, or until the salmon flakes easily with a fork and reaches an internal temperature of 135 - 145°F.
6. SERVE.
Allow to cool slightly before serving. Enjoy as is or pair with roasted vegetables or a simple green salad.
